Herbs and bread are the main ingredients to make strangolapreti (i.e. priests stranglers), the green Trentini “gnocchi”, a classic at grandma's table as well as at mountain shelter's.

Ingredients of the strangolapreti:

  • 300 g spinach
  • breadcrumbs from 4 rolls
  • 2 glasses of milk
  • 2 eggs
  • salt
  • butter
  • Parmesan Cheese
  • Sage

Cooking instructions of the strangolapreti:

Boil the spinach and drain them. Cut the bread in small cubes. Mix the milk, eggs and salt and add the bread to soften it. Let it rest. Then blend the spinach in the compound. Add a bit of flour to reinforce it. Form some balls roughly as big as a nut and cook them in salted water. Serve with melted butter, Parmesan and sage.
